Vegan Recipes: Cold & Warm Salad with Tofu

with an amazing miso-tahini sauce! Super healthy and tasty.
 

Enjoy this recipe that I created on the spot with the ingredients I had at home. I love how creative we can be with food. All we have to do is use our imagination.


This is just my version but you can play around and omit ingredients according to your taste buds. Play around. 

 

1/2 red pepper diced
1/2 cup firm tofu diced
1/2 cup cherry tomatoes diced
1/2 cup corn cooked or canned
1 clove of garlic
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp (heaped) dark miso
1 tbsp (heaped) tahini
1 tbsp mustard
pepper to taste
mixed green salad (as much as you like)

Cold & warm salad with tofu

Prepare the hot ingredients:
Fry the peppers and tofu in the olive oil, until the peppers are starting to be tender and the tofu has a bit of colour (3-4 mins). Add the garlic and continue to cook for a couple more minutes. Deglaze with the balsamic vinegar, turn the hit off and leave in the pan until you prepare the cold salad.

 

Prepare the sauce:
Add the miso, tahini and mustard and mix together adding slowly as much water as needed to lighten the consistency and create a runny, delicious umami sauce that looks like a thick vinaigrette.

 

Compose the salad:
Toss all the cold ingredients together in a salad bowl, starting with the mixed greens. Add the warm ingredients from the pan and don't forget to scrape everything from the bottom as it will add to the taste. Cover with the sauce. Add fresh black pepper. I added no salt due to the miso. 

 

Mix well until everything is covered with the sauce and ENJOY!

 

Variations:
You can also add some spring onions (which I did not have when I made it) or some hot chilli if you like the spicy kick!
